I never like throwing food because 1) it’s sayang and 2) it’s like throwing away some hard-earned money too. So when my husband bought bananas, thinking that our girls will eat it but ended up wasting the food so I decided not to give them anymore, I thought it’s a good opportunity for me to turn it into cupcakes.
So here I am again, back in the kitchen with zero formal training, and decided to use these overripe bananas. Baking banana cupcakes is easy. All you need are:
2 cups all purpose flour, 1 1/2 tsp baking powder, 1/2 tsp baking soda, 1/2 tsp ground cinnamon, 1/4 tsp salt, 1/4 tsp ground nutmeg, 1/8 tsp ground ginger, 1 1/2 cups mashed banana, 1 cup sugar, 1/2 cup oil or melted butter, 2 eggs and walnuts or chocolate chip (optional)
Here’s how to do it:
1) In a large bowl, combine flour, baking powder, baking soda, cinnamon, salt, nutmeg and ginger.
2) In a separate bowl, combine eggs, mashed banana, sugar and oil.
3) Then add the egg mixture to the flour mixture and stir until well combined. Expect the batter to be lumpy. Add in walnuts or chocolate chips (or both) if you want. Then spoon the batter into muffin pans and bake for 15 minutes or until toothpick comes out clean.
Aside from this, I also added some toppings on the banana cupcakes for added texture. I combined brown sugar and flour then blend in some butter until the mixture resembles coarse crumbs. Sprinkle it on top of the batter then bake.
Easy, right? Perfect for Sunday desserts or when your conscience can’t handle throwing away overripe bananas.
